Ian served his cooper's apprenticeship under the legenary Scottish Cooper John Neilly. He has carried forward his traditional skills from his master to Kentucky Bourbon Barrel, which is the Irish subsidiary of a huge American stave company, who are currently managing 22,000 barrels in Ireland. It is an impressive operation.
